Strawberry Laced Honey Pancakes

Ingredients:

For the Pancakes:

  • 100ml milk of choice, non dairy if necessary
  • 150g wholegrain or plain flour of choice*
  • 2 tsp baking powder
  • 1 large egg
  • 2 tbsp Boyne Valley Pure & Natural Honey
  • ½ a cup diced strawberries

For the toppings:

Directions:

  1. Whisk together all pancake ingredients in a jug or large bowl with the exception of the strawberries. Fold in the strawberries and leave to rest for 5 minutes.
  2. Heat a large pan over a medium heat. Grease with a little coconut oil or spray oil of choice.
  3. Add 2 – 2.5 tbsp of batter per pancake to the pan. The recipe will make a total of 6 – 8 pancakes.
    you can cook three to four pancakes at a time depending on the size of the pan I’m using.
  4. Allow to cook for 2 – 3 minutes on the first side before flipping and cooking for 2 minutes more.
  5. Prepare the strawberry cream in advance or as the pancakes cook, simply blend together three medium strawberries with the cream until whipped and soft peaks appear.
  6. Stack pancakes and top with strawberry cream. Add a few more strawberries and drizzle over some honey to sweeten. You can even add a sprig or two of some fresh mint or basil if you’re feeling fancy.

*Use gluten free if necessary, spelt flour also works just fine!
