Raspberry & Honey Overnight Oat Parfait

Ingredients:

For the Oats

  • ½  a mug of oats
  • ½ tbsp chia seeds
  • 1 tbsp Boyne Valley Pure & Natural Honey
  • ½ a mug of milk or water or a mixture of both
  • ½  mug natural Greek yoghurt or plain yoghurt of choice

For the Raspberry Layer

Directions:

  1. Mix together oats, 1 tbsp of chia seeds, 1 tbsp of honey, ½ a mug of milk or water, and ½ a mug of yoghurt in a bowl.
  2. Mash your frozen thawed raspberries and mix with ½ tbsp of chia seeds and 1 tbsp of honey.
  3. Place both mixtures into the fridge overnight.
  4. Layer up oats, raspberry “jam”, and remaining Greek yoghurt in a jar or glass in the morning.
  5. Top with a drizzle of honey, fresh raspberries and peanut butter if you fancy it.
  6. Both mixtures can be stored in the fridge, in larger volumes if you like, for up to three days.
