Peanut Butter & Honey Dan Dan Noodles

Servings 4
Ingredients:
For the Sauce
- 80ml soy sauce
- 2 tbsp (approx. 40g) smooth peanut butter (or you can use almond butter if you prefer)
- 2 tbsp Boyne Valley Pure & Natural Honey
- 1 tbsp apple cider vinegar
- ½ – 1 tsp chilli flakes
- 60ml water
Everything Else
- 1 tbsp olive oil for cooking
- 100g mushrooms finely chopped
- 400g turkey mince
- 220g dry noodles of choice, or spaghetti
- Spring onions and chopped peanuts to serve
Directions:
- Whisk together sauce ingredients in a jug and set to one side.
- Add oil to a large pan and fry off mushrooms for about 5 minutes. Set to one side in a bowl lined with some kitchen paper to drain off any excess moisture.
- Add turkey mince to the pan and cook for 8 – 10 minutes, breaking up the mince into nice small crumbles and allowing it to crisp up around the edges.
- Put noodles or pasta on to cook according to packet instructions.
- Add mushrooms back to the pan along with the sauce. Allow to simmer until sauce is thickened to desired consistency; about ten minutes!
- Serve over a bed of drained noodles or pasta and garnish with chopped nuts and spring onion.
