No Bake Cookies

Ingredients

  • 160g Boyne Valley Honey
  • 240g peanut butter*
  • 80g coconut oil or butter, melted
  • 300g oats
  • 40g desiccated coconut (or use more oats)
  • 80g chocolate chips or chunks (optional)**

*You can use almond butter or sunflower seed butter for a nut free option

**You could also add in seeds, raisins or chopped nuts!

Directions:

  1. Mix together peanut butter, honey and coconut oil or butter in a large bowl.
  2. Add the oats and coconut and mix well to combine.
  3. If using chocolate chips add them into the mix and use your hands to press them into the oaty cookie dough!
  4. Use a cookie or ice cream scoop to create 15 – 18 cookies depending on how small or big you want them.
  5. Place onto a baking paper lined plate or tray where they will set in the fridge or more quickly in the freezer. You can leave them as mounds or use damp finger tips to flatten and shape them into flatter rounds.
  6. Leave them to set in the fridge for a couple of hours or about 30 minutes in the freezer.
  7. Can be stored in the fridge or freezer. If storing in the freezer remove them about 5- 10 minutes before you want to tuck in depending on how warm a day it is!
