Honey spelt loaf




  1. Preheat the to 160˚C/140˚C fan/gas mark 3. Butter or grease a standard 1kg loaf tin.
  2. Heat the milk in a saucepan over a medium-low heat. Stir in the honey until combined, then remove from the heat and leave to cool slightly.
  3. Combine the flour and bicarbonate of soda in a small bowl.
  4. Stir the butter and eggs together in a large mixing bowl. Gradually stir in the milk mixture.
  5. Fold in the flour mixture until just combined.
  6. Pour into the tin and bake for 40-45 minutes until the bread is coming away from the sides of the tin and it is brown on top.
  7. Leave to cool for a few minutes in the tin, then transfer to a wire rack to cool completely.
