Honey Roast Plum Porridge with Ginger & Orange

Serves 4

Ingredients:

400g / 6-7 Plums

4 x 35g Flahavan’s Quick Oats Sachets

2 Tablespoons of Boyne Valley Honey

20g / 3-4 Pieces of Crystallised Ginger, Finely Chopped

Zest and Juice of 1 Orange

Directions:

Heat the oven to 200ºC. Halve the plums and remove the stones. Place cut side up in an oven proof dish and sprinkle over the ginger. Mix half the orange zest with the honey and drizzle over the plums. Pour over the orange juice and put in the hot oven for 20-25minutes until the plums are soft but still holding their shape and a little caramelised. Serve with your porridge or your overnight oats.
