Blueberry Oat Crumble Bars

Servings – 10


For the Raspberry Filling

  • 300g blueberries (fresh or frozen)
  • 3 tbsp (60g) Boyne Valley Raw Honey
  • 1 tsp vanilla extract
  • 20g cornstarch + 45ml water
  • 1 tbsp lemon juice

For the Base and Topping

  • 120g plain flour 
  • 100g porridge oats
  • 3 tbsp (60g) Boyne Valley Raw Honey
  • 40g soft brown sugar
  • 150g butter or coconut oil melted


  1. Place blueberries, vanilla extract, and honey into a pot over medium heat. Heat through until bubbling; this will take a little longer if using frozen blueberries. Mash up as much or as little as you like, and leave to simmer for 5 minutes.
  2. Mix together starch, lemon juice and water and add to the pot; stir and simmer for a further 5 minutes. Set to one side.
  3. Preheat your oven to 180C (350F).
  4. Mix together flour, and oats in a large bowl.
  5. Mix together melted butter or coconut oil with honey in another bowl or jug until smooth.
  6. Add wet to dry and mix well so everything is nicely coated. 
  7. Place about ⅔ of the mixture into the bottom of a pre-lined baking tray and lightly greased 8×8 inch square baking tin. 
  8. Press down using your finger tips or the back of a dessert spoon and spread evenly. Bake for 10 minutes.
  9. Remove from the base from the oven, spread the blueberry filling over the top and then sprinkle over the remaining crumble mixture.
  10. Return to the oven to bake for a further 15 – 20 minutes; until lightly golden!
  11. Allow to cool in the fridge before slicing or if you don’t want to slice into bars you can dig right in and scoop out as much as you want into a bowl.
  12. Delicious topped with vanilla ice cream or plain natural yoghurt and an extra drizzle of honey if you fancy it!
